Apricot Almond Energy Bites

We see a lot of energy bars and supplements in stores now days, but how healthy are they?  Store-bought bars often contain unpronounceable preservatives, not to mention take a bite out of your budget.  Why not make your own energy bites at home?

Next time you need an afternoon pick-me-up or a post-workout boost, try one of these no-bake, vegan Apricot Almond Energy Bites from Nicole at Foodie Loves Fitness.  

These portable, all-natural energy bites are the perfect fuel for on-the-go adults and kids alike.  The fiber in the oats and apricots will stave off hunger for longer, as will the healthy fats.


Apricot Almond Energy Bites

  • ½ cup dried apricots
  • ¼ cup creamy salted almond butter
  • ½ cup quick rolled oats
  • 3 tablespoons hemp hearts
  • 2 tablespoons pure maple syrup
  • ½ teaspoon almond extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon water
  • ⅛ teaspoon salt

Instructions:

Place all ingredients except for the water in the food processor. Pulse until the mixture forms a dough.

Remove the top of the processor, scrape down the sides of the dough and add in the water. Pulse again.

The mixture should be somewhat sticky and easy to roll into balls. Add a bit more water to achieve desired consistency if necessary.

Roll into 10 balls. You can eat these bites immediately, or store in the fridge if a bit of a harder texture is desired.
