Barley Salad

Makes 6 cups
Serves 18

1 1/2 cups Farmer Direct Co-op Organic Hulless Barley
1 (14.5 oz.) can chicken broth
1 1/2 cups water
6 bay leaves
1/4 tsp. salt
1/4 tsp. pepper
1/2 Tbsp. crushed garlic
1/2 cup thinly sliced and chopped fennel bulb
1/2 cup chopped cucumber
1/4 cup chopped green onion
3/4 cup thinly sliced button mushrooms
1/2 cup chopped red and yellow pepper
3/4 cups feta cheese
4 oz. (120 ml) prepared balsamic vinaigrette (or use your favorite homemade recipe)

Place the barley, broth, water, bay leaves, salt, pepper and garlic in a slow cooker and cook on high for 5 to 6 hours until the barley is tender. Once the barley is tender, remove the bay leaves and allow barley to cool.

Place the cooked, cooled barley in a sieve and rinse under cool water until the water runs clear. Place the barley in a large bowl and add all remaining ingredients.

Mix well and refrigerate for 2 to 3 hours or more, then enjoy.
