This one pot wonder Lentil Sweet Potato Soup is filled with rich fall spices and is ready in just 30 minutes!
This creamy vegan soup was created by Megan from Skinny Fitalicious using our lentils. She refers to lentils as the "superfood of beans" and we couldn't agree more. High in protein and fiber, they will keep you satisfied and feeling strong. They also contain valuable B vitamins for energy and minerals like phosphorus, manganese and iron.
Another reason we love this recipe is the antioxidant rich spices it contains. These are especially good to have in the cooler months when our immune systems can use an extra boost!

Lentil Sweet Potato Soup
- 1 C lentils
- 1½ C diced sweet potato (~1 medium)
- 1 14 ounce can diced no salt added tomatoes
- 1 28 ounce can whole tomatoes
- ½ C white onion, diced
- 2 C baby spinach
- 1 tsp extra virgin olive oil
- 6 C vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp corriander
- 1 tsp ground ginger
- ½ tsp turmeric
- Salt & pepper to taste
