Mayan Lentil Soup

This one-pot dish is a flavorful, fuss-free dinner the whole family will enjoy!

Prep time: 10 minutes
Cook time: 45 to 60 minutes
Serves: 4

6 cups organic vegetable or chicken stock
2 cups Farmer Direct Co-op Organic Large Green Lentils
1 small dried or fresh habanero pepper (depending upon your heat tolerance, begin with half and add to taste)
1 small sweet yellow, red or orange pepper
1 large tomato diced, or 10 mini tomatoes, sliced
1 small red onion
¼ cup fresh cilantro
2 garlic cloves
¼ tsp. cumin
1 Tbsp. maple syrup
Juice of 1 lime
1 avocado
Himalayan salt to taste
Garnish: chopped cilantro leaves and lime wedges

Heat the stock to boiling. Add the lentils, habanero pepper, sweet peppers, tomato, onion, cilantro, garlic, cumin, maple syrup, and the juice of 1 lime. Simmer for 45 to 60 minutes, until lentils are to your preferred consistency.

Serve the soup in four bowls. Slice the avocado and place a quarter of it on each serving. Garnish with fresh cilantro. Serve with a quarter of lime to be squeezed into each bowl.
