Plantain and Lentil Coffee Cake

Plantains and lentils... in a cake?! This deceptively healthy breakfast cake even passed the kid test!

This breakfast treat may seem a little strange, but we love the idea of a banana bread-esque breakfast treat that packs a little extra nutritional punch!

Jennifer's gluten-free recipe is free of high-gylcemic sugars, and contains nutrition from wholesome goodness from plantains and lentils.

Plantain and Lentil Coffee Cake

  • 1 C cooked organic French green lentils

  • 1 C peeled and chopped very ripe plantain (about 1 medium)

  • 2 T unsweetened almond milk

  • 1/2 C olive oil

  • 1 large egg

  • 1/2 C coconut sugar or sugar substitute

  • 1 1/3 C gluten free baking mix your favorite brand

  • 1/4 C unsweetened shredded coconut

  • 1/4 C raw sliced almonds or tiger nut slivers

  • Coconut oil cooking spray

  • 3 T honey
