These spinach, lentil, and oat veggie burgers couldn't be healthier! Bonus: they're easy to make at home.
Veggie burgers have grown in popularity over the past few years; however, they can seem daunting to make at home. Meghan from Clean Eats, Fast Feets proved how easy they are to make... her husband made them unsupervised!
Her recipe uses our lentils and oats, spinach, and a few simple seasonings everyone has on hand. Don't let the color scare you. These burgers are delicious!

Spinach Lentil Veggie Burgers
- 2 C cooked French green lentils
- 2 C spinach
- 1 C onion, cut into chunks
- 2 cloves garlic
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp parsley
- 2 flax eggs* (2T of flax powder mixed with 6T of water) or 2 eggs (if not vegan)
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp yellow mustard
- 1 1/2 to 2 C rolled oats
- Olive oil, to grease skillet
