Split Green Pea Falafel

With shorter fall days fast approaching, make-ahead meals are key. This recipe for Split Green Pea Falafel is a healthier take on a traditional favorite.

Dixya's recipe is gluten-free and vegan friendly, making it a great option for weeknight dinners or lunch-box fillers.  They can even be prepped ahead of time and reheated from the fridge or freezer! 

Split peas are members of the pulse family, which includes peanuts, soybeans, peas, beans, chickpeas, and lentils.  They are a fantastic source of plant-based protein and fiber, helping to keep your family full longer.

Split Green Pea Falafel

  • 1-2 T olive oil
  • 1 C cooked split green peas
  • ½ small onion, chopped
  • 3 garlic cloves
  • ½ bunch cilantro, chopped
  • ½ bunch parsley, chopped
  • ¼ C buckwheat flour
  • 1 large lemon, squeezed
  • 2 tsp cumin powder
  • Salt, pepper to taste
