Fava beans (sometimes called “faba” or “broad” beans) are common in Italian dishes, where these beans’ buttery-smooth texture and slightly nutty flavor really shine. Their earthy flavor is particularly complemented by bright flavors such as citrus, mint or cilantro.
Fava beans are an excellent source of dietary fiber (36% DV!) and protein, a good source of iron, and are low in fat.

Do not soak fava beans. Rinse and sort 1 cup beans, then bring to a boil with 3 cups water. Cover, reduce heat and simmer for 40-45 minutes. Fava beans are naturally soft with a creamy texture, so they will break apart during cooking and stirring. Taste frequently toward the end of cooking time to test for desired texture. Yields around 3 cups cooked beans.
Store in an airtight container in a dark, cool, dry place for up to 24 months. Cooked beans may be stored in the refrigerator for 1 week. We do not recommend freezing fava beans due to their soft texture.
